The Falcon content management service website that you now have has been designed so that most of the features that you might want are available to you. Potentially the site can deliver a lot of other functionality and we have chosen to leave this available - we expect that most administrators won't want to experiment, but the potential is there. For this reason, when you are setting up the site you may see options that you won't need to use, or that it's suggested you don't use. Not all options will be explained but you can easily find out all about the underlying software, Plone, from http://plone.org/
If you choose to be highly exploratory there is a chance of breaking your site. The sites are backed up and can be restored on request but of course you will lose information between the time of breakage and the last backup.
